Twice Baked Annabelle Potatoes

Ingredient Amount
2 Large Annabelle potatoes
2 1/2tbsp / 20ml Sour cream
1/4 cup / 1ml Green pepper finely diced
to taste salt to taste

Directions

Wash potatoes and pierce several times. Oven Bake Annabelle potatoes until cooked through (about 40 minutes- depending on the size). Cut in half. Make criss-cross cuts through the flesh to make it easier to scoop. Scoop out the flesh being careful not to break the skin. Mash well and add salt to season. Finely dice green peppers. Add sour cream and green peppers to potatoes and beat mixture until creamy. Scoop mixture back into potato %u2018boats%u2019 sprinkle top with bacon bits and bake for an additional 20 minutes.
