Sour Cream and Cheese Stove Top Scallop Potatoes

Ingredients
Ingredient | Amount |

3 / 3 | 3 medium potatoes peeled and sliced thin |
2 | 2 medium onions sliced |
1 cup / 250ml | milk |
1/2 cup / 125ml | sour cream |
2 | 2 cheese slices (can also use grated cheese) |
to taste / to taste | salt and pepper |
1 1/2 cups / 375ml | water |
3 tbsp / 40ml | margarine |
1 | garlic clove, crushed |
Directions
Take medium skillet and place on medium heat. Add margarine,1 cup of water, salt, pepper and garlic. Let boil and add sliced potatoes. Cover and turn heat down. Simmer for about 12 minutes. Add onions and milk and rest of water. Let simmer until most of the milk and water evaporates. Add sour cream. Let simmer 5 minutes longer and add 2 processed cheese slices. (or use grated cheese if preferred). Remove from stove and let cheese melt into potatoes. This should take you no longer then 25 minutes to make. * I leave the skins on the potatoes if I am using new potatoes.
