Ingredients

Ingredient Amount
1 garlic bulb - cloves separated
1/3 cup / 80ml green onion diced
2 tbsp / 25ml margarine
2 1/2 lbs / 1 kg potatoes peeled, cooked
1 tbsp / 15ml dijon mustard
1 1/2 cups / 375ml milk
1/2 cup / 125ml cheddar cheese
1/3 cup / 80ml fresh parsely chopped
sprinkle olive oil generous sprinkle

Directions

Pre heat oven to 400F. To roast garlic - separate cloves from a large bulb. Place cloves on foil wrap sprinkle generously with olive oil and fold. Put in oven to roast for about 45 minutes. Let it cool and peel. In a sauce pan melt the margarine, add garlic and green onions and saute for 15 min. Add all the rest of the ingredients. Adjust flavor with salt and pepper. Enjoy
