Potato Spinach Bake

5 medium Potatoes
1 medium Onion
1 lb / 500 g Spinach
1 1/2 Cup / 375 ml Cheddar cheese (grated)
2 Eggs
1 tbsp. / 15 ml Vegetable oil
1 tbsp. / 15 ml Poppy seeds
1/4 tsp. / 1 ml Paprika
1 tsp. / 5 ml Ground cumin
1/4 tsp. / 1 ml Nutmeg
1/2 cup / 125 ml Milk
1/2 tsp / 2.5 ml Salt
1/2 tsp / 2.5 ml Pepper

Directions

1) Scrub potatoes then boil until tender. Slice about 1/4 inch thick. 2) Chop onion and saute until translucent, add spices, stir together for about 1 minute. 3) Wash, drain and chop spinach. Add to the onion mixture and cook until spinach is softened. 4) Place sliced potatoes in a single layer on a greased casserole dish. Sprinkle with half of the grated cheese and half of the poppy seed. 5) Add a layer of the spinach and onion mixture than add another layer of potato and sprinkle with remaining cheese and poppy seeds. 6) Beat the eggs and milk together, add salt and pepper then pour over entire mixture. 7) Bake at 350 degrees for 40 - 45 minutes.
