Potato Fish Bake

Ingredients

Ingredient Amount
2 Tbsp / 30 mL Butter
1 Medium onion
1/2 cup / 125 mL Chicken stock
1/2 tsp / 2 mL Summer savory
1 tsp / 5 mL Parsley
1 pound / 0.45 Kg Haddock or cod filets
to taste Salt and pepper
1/3 cup / 75 mL Flour
1 cup / 250 mL Milk
2 cups / 500 mL Mashed potatoes
1/3 cup / 75 mL Cheddar cheese

Directions

Saute onion in butter until brown. Stir in flour, add milk and stir. This may be quite thick add chicken stock to reach a nice consistency, not to thick. Add summer savory ,parsley salt and pepper to taste. Set aside. In a 9x9 square baking dish place mashed potatoes to one side, on the other side place fish fillets. Cut if necessary then pour sauce over fish and some on potato. Bake at 350F untill fish is done about 20-25 minutes or until slightly brown. Add a little cheddar cheese over top and bake a little longer
