1/2 pound / 8 oz Potato
1/2 tsp / 2 ml Salt
2 tbsp / 1 oz Butter or Margarine
4 tbsp / 2 oz Flour

Directions

Potato Cakes are best made while the potatoes are hot. 1) Wash, peel and cook your potatoes. 2) Put potatoes through a potato ricer. 3) Add salt and melted butter, then work in enough flour to make a pliable paste. 4) Roll into a circular shape about 1/4 thick. 5) Cut into 6-8 farls (circle cut into quarters (triangle shapes)) and cook on a medium heat until well browned on both sides. Alternatively potato cake may be cut into large rounds with a plain cutter.
