Pineapple Ham & Potato One Dish Main

2 pounds / 1 kg Thinly sliced ham
14 oz / 398 ml Crushed pineapple (1 can)
1 cup / 250 ml Brown sugar
1 Tbsp / 15 ml Dry mustard
5 pounds / 2.5 kg Potatoes
4 Tbsp / 60 ml Butter
1 Tbsp / 15 ml Garlic (fresh or powdered)
1 Large / 1 large Onion sliced
1/4 Cup / 63 ml Cream or Milk
2.5 Tbsp / 45 ml Corn Starch
To Taste Salt & Pepper

Directions

Preheat oven to 400F 1) Layer ham slices on the bottom of a cassarole dish. 2) Combine together, pineapple (with the juice), brown sugar, mustard & cornstarch. Pour over ham slices. 3) Bake in 400F oven until sauce is bubbly & thick (~ 30min) Meanwhile: 4) Boil potatoes and onions together, drain when tender. 5) Mash well (or beat with blender) 6) Add salt (keep in mind the ham is salty!), pepper, cream (or milk), 2 tbsp butter and garlic until light and fluffy. 7) Once ham is done top with mashed potatoes. 8) Top with remaining 2 Tbsp of butter (melt in microwave) and bake at 400 until top is brown. This can be prepared the day before.
