Norwegian Flat Bread (LEFSE)

Ingredients

Ingredient Amount
3 cups / 750 mL Potatoes
1 Tbsp / 15 mL Shortening
1 tsp / 5 mL Salt
1 cup / 250 mL Flour
1/2 cup / 125 ml Water

Directions

Boil potatoes until soft and put through a potato ricer. Combine mashed potatoes with shortening. Let stand in a covered pot overnight. Add salt and 1/2 cup flour to potato mixture. Mix with hands, add water and another 1/2 cup flour. Roll out very thin and bake on a hot griddle. The flat bread will bubble. Turn over once and bake the other side. Eat with butter and sugar!
