Mom's Special Potatoes

Ingredient Amount
8 PEI potatoes (medium size)
1/2 cup / 120 ml butter
1/2 cup / 120 ml milk
1 egg
1 cup / 250 ml cream cheese
to taste salt and pepper
1 small onion


Boil potatoes until tender. Drain. Mash with butter and milk. Using a mixer, add cream cheese and mix until smooth. Take 2 Tablespoons of the potato mixture in a small bowl and beat with one egg. Mix with remaining potato mixture and and grated onion, mixing well. Add salt and pepper to taste. Bake in a 350 oven for 1 hour until potatoes are slightly browned. Serve immediately.
