8 | PEI potatoes (medium size) |
1/2 cup / 120 ml | butter |
1/2 cup / 120 ml | milk |
1 | egg |
1 cup / 250 ml | cream cheese |
to taste | salt and pepper |
1 small | onion |
Directions
Boil potatoes until tender. Drain. Mash with butter and milk. Using a mixer, add cream cheese and mix until smooth. Take 2 Tablespoons of the potato mixture in a small bowl and beat with one egg. Mix with remaining potato mixture and and grated onion, mixing well. Add salt and pepper to taste. Bake in a 350 oven for 1 hour until potatoes are slightly browned.
