2 - 3 cups / 500-750 ml Left over boiled potatoes
1 Egg
1/2 C / 125 ml Flour
1 tsp / 5 ml Baking Powder

Directions

Place leftover boiled potatoes in a large mixing bowl and mix in one egg. In separate bowl sift 1/2 cup of flour and 1 tsp of baking powder and a pinch of salt. Add flour mixture to potato mixture and mix together lightly. In a preheated pan with oil, spoon mixture into frying pan or make into patties and fry. Fry lightly on each side. Serve with your favorite dish: with baked beans, meat, fish, eggs, etc. Cheese lovers may top with cheddar cheese while hot. Kids of all ages love irish potatoe cakes.
