Ingredients

2 cups / 500ml | cubed red potatoes |
2 cups / 500ml | carrots, chopped |
1 cup / 250ml | 1 inch pieces, yellow beans |
1 cup / 250ml | 1 inch pieces, green beans |
1 cup / 250ml | 1 inch pieces, purple beans |
1 cup / 250ml | chopped onions |
2/3 cup / 160ml | cream, 18% |
2/3 cup / 160ml | coconut milk |
2 tblsp / 25ml | curry paste |
Directions
Saute onions and set aside. Cook each vegetable until still firm in the least amount of water you can get away with. Cook potatoes on their own. Cook carrots on their own. Cook all the beans together. Drain vegetables. In a large pot add cream, coconut milk and curry paste. Blend well. Cook on simmer until all veggies are fork tender.
