Grilled Potato Skins

Ingredients
Ingredient | Amount |

8 | Medium yellow flesh or Small Russet |
1 cup / 250 ml | Cheddar Cheese, Shredded |
1/2 cup / 125 ml | Sour cream |
1 | Small onion, finely diced |
5 slices | Bacon, crumbled |
3 tbsp / 45 ml | Butter |
1 tsp / 5 ml | Dried Rosemary |
to taste | Salt |
to taste | Pepper |
Directions
Preheat grill to medium heat. Combine rosemary, butter, salt, and pepper in a small bowl. Cut potatoes in half and hollow out the center of each half. Place potatoes in the microwave for 6-7 minutes then brush potatoes with butter mixture. Place potatoes on grill rack skin side up. Grill for 5 minutes, turn, and grill for another 3 minutes. Add cheese to potatoes and cook for an additional 2-3 minutes. Remove from grill, and top with crumbled bacon, onion, and sour cream.This potato recipe is brought to you courtesy of Michelle Spencer.
