Grilled Potato Skins

Ingredient Amount
8 Medium yellow flesh or Small Russet
1 cup / 250 ml Cheddar Cheese, Shredded
1/2 cup / 125 ml Sour cream
1 Small onion, finely diced
5 slices Bacon, crumbled
3 tbsp / 45 ml Butter
1 tsp / 5 ml Dried Rosemary
to taste Salt
to taste Pepper


Preheat grill to medium heat. Combine rosemary, butter, salt, and pepper in a small bowl. Cut potatoes in half and hollow out the center of each half. Place potatoes in the microwave for 6-7 minutes then brush potatoes with butter mixture. Place potatoes on grill rack skin side up. Grill for 5 minutes, turn, and grill for another 3 minutes. Add cheese to potatoes and cook for an additional 2-3 minutes. Remove from grill, and top with crumbled bacon, onion, and sour cream.
