Gerri's Baked Hash Brown Casserole

2 lb. / 900 g | Frozen hash browns |
2 cups / 500 ml | Sour cream |
2 cans | Cream of mushroom soup |
1/2 cup / 125 mL | Melted butter |
1 | Small onion finely diced |
to taste | Salt and pepper |
1/4 cup / 60 mL | Grated parmesan cheese |
Directions
Serves 8-10, freezes well and great for buffets. Preheat oven to 350 degrees. Butter a 9x12 Casserole dish. Mix all the ingredients together in a very large bowl. Pour into casserole dish. Cover the top with grated parmesan cheese. Put dish on cookie sheet in case of overflow.
