Egg and Potato Casserole

4 Tbsp / 80 mL | Butter |
4 Tbsp / 80 mL | Flour |
6 | Hard boiled eggs, sliced |
pinch | Salt and Pepper |
pinch | Paprika |
4 cups / 1000 mL | Cooked cubed potatoes |
2 cups / 500 mL | Milk |
1/2 cup / 125 mL | Cracker crumbs |
2 Tbsp / 40 mL | Butter |
1 cup / 250 mL | Grated cheese |
Directions
Mix first 4 Tbsp butter, salt, pepper. paprika, potatoes and eggs. Melt 4 Tbsp of butter blend in flour, add milk and cook and stir until sauce thickens. Season to taste. Put alternate layers of potatoes, eggs, and sauce in a buttered dish. sprinkle with buttered cracker crumbs and grated cheese. Bake in 350F oven for 15 minutes. Serves 6-8. USE W.P.
