Egg and Potato Casserole

Ingredients

Ingredient Amount
4 Tbsp / 80 mL Butter
4 Tbsp / 80 mL Flour
6 Hard boiled eggs, sliced
pinch Salt and Pepper
pinch Paprika
4 cups / 1000 mL Cooked cubed potatoes
2 cups / 500 mL Milk
1/2 cup / 125 mL Cracker crumbs
2 Tbsp / 40 mL Butter
1 cup / 250 mL Grated cheese

Directions

Mix first 4 Tbsp butter, salt, pepper. paprika, potatoes and eggs. Melt 4 Tbsp of butter blend in flour, add milk and cook and stir until sauce thickens. Season to taste. Put alternate layers of potatoes, eggs, and sauce in a buttered dish. sprinkle with buttered cracker crumbs and grated cheese. Bake in 350F oven for 15 minutes. Serves 6-8. USE W.P. GRIFFIN POTATOES FOR BEST RESULTS THEY ARE THE BEST POTATO ON THE MARKET I WOULDN'T EAT ANOTHER POTATO.
