Double Stuffed Potatoes

1 cup / 250 ml | Shredded cheese |
4 stalks | Green Onion |
12 strips | Bacon |
3 / 3 | Baker Potatoes |
1/2 cup / 125 ml | Butter |
1/2 cup / 125 ml | Sour cream |
Directions
Pierce the three potatoes with a fork. Place in oven at 400 F for 50 minutes. While potatoes are baking cook the bacon, cut up green onion, and shredded cheese. Once potatoes are soft, remove from oven. Cut off top approx. 3/4 of the way up. Hollow out potato skins, scoop potatoes into a large mixing bowl with 3/4 of the green onion, bacon, and shredded cheese. Add sour cream and butter. Mix with an electric mixer. Once whipped scoop mixture back into empty potato skins. Top with remaining green onion, bacon, and shredded cheese.
