Deconstructed Baked Potatoes

1/2 cup / 125 ml | Sour Cream |
2.5 ounces / 75 gram | Boursin Cheese |
2 / 2 | Leftover Baked Potatoes |
1/4 cup / 60 ml | Hellman's Mayonaisse |
2 | Green Onions |
1/2 cup / 125 ml | Grated Cheddar Cheese |
1/2 tsp / 2 ml | Pepper |
1/4 cup / 60 ml | Bacon Bits |
Directions
Preheat oven to 375 degrees. Cut leftover baked potatoes into small chunks, remove any loose potato skin. Place in a large bowl. Crumble Boursin cheese into the potato chunks, add sour cream, hellman's mayonaisse, green onions, bacon bits and pepper. Mix all ingredients together and pat into a 9 X 9 pan. Sprinkle the top with grated cheddar cheese. Bake for 25 to 30 minutes - or until mixture is bubbly and grated cheese has a nice melt.
