Codfish Potato Puff Casserole

1 tbsp / 15ml | Dried onion or cooked or onion salt |
1lb / 453g | Salt Cod (soaked overnight) boiled |
3 cups / 675ml | Mashed potatoes |
2 | Eggs beaten |
1/4 cup / 60ml | Milk |
to taste | salt and pepper |
Directions
In a bowl, add enough water to cover 1 lb salt cod. Let soak overnight. Next day - Drain water and add new cold water. Boil until tender (approximately 15 minutes). Drain well and dice. Wash, peel, boil and mash potatoes. (or use leftover mashed potatoes!). Add 1/4 cup (60ml) of milk, 2 beaten eggs, dried onion, pepper and salt. Add in salt cod and mix well.
