Codfish Potato Puff Casserole

Ingredients

Ingredient Amount
1 tbsp / 15ml Dried onion or cooked or onion salt
1lb / 453g Salt Cod (soaked overnight) boiled
3 cups / 675ml Mashed potatoes
2 Eggs beaten
1/4 cup / 60ml Milk
to taste salt and pepper

Directions

In a bowl, add enough water to cover 1 lb salt cod. Let soak overnight. Next day - Drain water and add new cold water. Boil until tender (approximately 15 minutes). Drain well and dice. Wash, peel, boil and mash potatoes. (or use leftover mashed potatoes!). Add 1/4 cup (60ml) of milk, 2 beaten eggs, dried onion, pepper and salt. Add in salt cod and mix well. Place in a greased casserole dish and bake for 30 minutes @350 degrees
