Cheesy Potato Bites

Ingredients

Ingredient Amount
1/2 Cup / 125 ml bacon bits
1/2 Cup / 125 ml mozza cheese
1/2 Cup / 125 ml ranch or peppercorn ranch dressing
10 Potato (smalls)

Directions

Small potatoes work best. Boil potatoes until cooked through (keep whole) Cut off both tips so they will sit on a baking sheet. Scoop out about 1 tsp of the potato from one end to make a little cup. Fill each little hole with bacon bits, top with mozzarella cheese. Bake for ~15 minutes until cheese is melted. Optional: Use salad dressing as a dipping sauce.
