Cheesy Potato Bites

1/2 Cup / 125 ml | bacon bits |
1/2 Cup / 125 ml | mozza cheese |
1/2 Cup / 125 ml | ranch or peppercorn ranch dressing |
10 | Potato (smalls) |
Directions
Small potatoes work best. Boil potatoes until cooked through (keep whole) Cut off both tips so they will sit on a baking sheet. Scoop out about 1 tsp of the potato from one end to make a little cup. Fill each little hole with bacon bits, top with mozzarella cheese. Bake for ~15 minutes until cheese is melted.
