Cheesy Bacon Potatoes

1 | Small Onion |
3/4 lb / 340 grams | Bacon |
1 cup / 250ml | Cheddar Cheese |
3 3/4 cups / 900ml | Chicken Broth |
3tbsp / 45ml | Flour |
3tbsp / 45ml | Reserved Bacon Grease |
1 3/4cup / 900ml | Reserved Chicken broth |
Directions
1.)Fry bacon until crispy 2.)Drain bacon on paper towel and let cool 3.) Peel and slice potatoes 4.) Peel and dice onion 5.) Boil potato and onion in enough chicken broth to cover for approx. 10 minutes until potato are just tender. 6.) Drain potatoes and onion and reserve the broth 7.) Crumble bacon into bite size pieces and set aside 8.)In a medium sized pot, whisk together reserved bacon grease and flour. Heat on medium heat until it starts to bubble. Gradually add reserved chicken broth until boiling and thickened 9.Add shredded chedder and stir until melted 10.) Layer potatoes, cheese sauce and bacon in a cassarole dish (2 layers). 11.)
