Baked Potato Soup

Ingredients

Ingredient Amount
2/3 cup / 150 mL Butter
2/3 cup / 150 mL Flour
7 cups / 1750 mL Milk
4 Large baking potatoes
6 Green onions
12 strips Bacon
1 1/4 cups / 310 mL Shredded cheddar cheese
1 cup / 250 mL Sour cream
1 tsp. / 1 tsp Salt
1/2 tsp. / 2 mL Freshly ground black pepper

Directions

Bake, peel and cube potatoes. Slice onions. Cook, drain and crumble bacon. Melt butter in large saucepan. Stir in flour. Heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat, simmer for 10 minutes. Add remaining ingredients, stir until cheese is melted. Serve immediately.
