Baked Potato Soup

2/3 cup / 150 mL | Butter |
2/3 cup / 150 mL | Flour |
7 cups / 1750 mL | Milk |
4 | Large baking potatoes |
6 | Green onions |
12 strips | Bacon |
1 1/4 cups / 310 mL | Shredded cheddar cheese |
1 cup / 250 mL | Sour cream |
1 tsp. / 1 tsp | Salt |
1/2 tsp. / 2 mL | Freshly ground black pepper |
Directions
Bake, peel and cube potatoes. Slice onions. Cook, drain and crumble bacon. Melt butter in large saucepan. Stir in flour. Heat and stir until smooth. Gradually add milk, stirring constantly until thickened. Add potatoes and onions. Bring to a boil, stirring constantly. Reduce heat, simmer for 10 minutes.
