|1/2 lb / 250 g||Baking potato|
|1/3 cup / 80 ml||Sliced vegables (onions, leeks, garlic)|
|1 tbsp / 15 ml||Butter|
|1 tsp / 5 ml||Coarse salt|
|1 tsp / 5 ml||Pepper|
DirectionsWash potatoes. Slice/cut potato through the center length wise about 3/4 of the way through. Insert/place sliced vegetables. Add butter. Close over potato gently so as not to separate it. Tightly wrap stuffed potato with bacon slice. Season with coarse salt & pepper. Wrap in foil and place on BBQ (medium heat) for 1 hour, turning every 10-15 minutes on the grill. Insert sharp knife through foil wrapped potato after 1 hour, if knife goes into potato easily - then remove potatoes from grill they will stay hot/warm for over 15 minutues due to being wrapped in foil. Unwrap from foil and serve with sour cream!
