Austrian Potato Casserole

Ingredients

Ingredient Amount
6 large yellow or white potatoes
3tbsp / 40ml fresh parsley finely chopped
3tbsp / 40ml soft butter 1tbsp to grease pan 2tbsp to add to recipe
1 onion, large regular or sweet large

Directions

Wash and slice potatoes - leave skins on for nutrients. Peel onion and slice. Coat a 6 x 8 glass oven dish with 1tbsp butter. Layer potatoes, onion and butter in dish. season with salt and pepper and sprinkle parsley on top. Cover with foil and bake @350 for 40-50 minutes until cooked. Uncover to brown top and serve. (optional- if you love garlic add some chopped garlic, or dried dill)
