|1 cup / 250 ml||Mashed Potatoes|
|4 tbsp / 60 ml||Margarine|
|1/2 cup / 125 ml||White Sugar|
|1/2 cup / 125 ml||Brown Sugar, packed|
|1 cup / 250 ml||Flour|
|2 tsp / 10 ml||Vanilla|
|1 tsp / 5 ml||Baking Soda|
|1/2 tsp / 2 ml||Salt|
|1/2 tsp / 2 ml||Cinnamon|
DirectionsIn large bowl, cream margarine, sugar and brown sugar. Beat in flour, baking soda, salt and cinnamon until well blended. With spatula stir in egg and vanilla, than potatoes. Pour batter into non-stick 13x9 inch pan. Bake 350F for 20 minutes. Cut and remove from pan while slightly warm and sprinkle with icing sugar.
