Snow Crab and Lobster Twice Baked Potato with White Wine Lobster Cheese Sauce

Ingredient Amount
2 cups / 500 ml White wine and garlic lobster broth
2 cups / 500 ml Grated cheddar cheese
1 cup / 250 ml Bacon bits
1 bundle Green onions
11 oz / 300 ml Lobster meat
11 oz / 300 ml Snow Crab meat
1/2 cup / 125 ml Heavy Cream
6 Large Baked Potatoes
4 tbsp / 60 ml All Purpose Flour
4 tbsp / 60 ml Butter
1 tbsp / 15 ml Shallots
to taste Salt and Pepper
1/2 cup / 125 ml Milk


- Bake potatoes - Hollow out potatoes leaving the shell intact in order to stuff with filling - Mash potatoes with milk, butter, sour cream, bacon bits and green onions - Add lobster and crab meat Cheese sauce: - Saute shallots in butter until translucent - Add flour stir and cook for 5 minutes on medium heat - Add lobster broth and white wine - Bring to a boil and then simmer for 5 minutes on medium heat - Add cream and bring back to a boil and simmer for 5 minutes on medium heat - Add salt and pepper to taste - Add cheese and whisk until creamy Potato preparation: - Pour some cheese sauce in potato mixture - Fill each potato with filling - Place potatoes in oven and reheat - Drizzle top of each potato with desired amount cheese sauce - Top each potato with a lobster claw - Serve
