Seafood Stuffed Twice Baked Potato

Ingredient Amount
4 / 4 4 good sized baking potatoes
2 tbsp / 25ml butter
10 / 10 fresh chives chopped
1/4 cup / 50ml whipping cream
to taste salt pepper
1/3 cup / 80ml snow crab
1/3 cup / 80ml lobster
2 cloves garlic chopped and sauted
1 cup / 250ml monterey jack cheese (or your choice)
1/3 cup / 80ml small salad shrimp


Bake potatoes until cooked. Let cool and cut top off the potato. Scoop out flesh with spoon being careful not to break the skin (hint-crisscross cut first before scooping-it comes out easy without breaking the skin) Place in bowl. Saute butter and garlic. use a pastry brush and rub on the inside of the potato skin. Use the rest of the butter to add to the the bowl of potato. Add cream and mash well. chop lobster and crab add to bowl of potatoes. Add shrimp and 1/2 of the cheese. Fold mixture together to blend. Scoop portions back into the potato shell. Season with pepper and salt to taste. Sprinkle with left over cheese and bake in oven 375 f for 20 min. Garnish with chopped chives.
