Roasted Annabelle Rustic Warm Potato Salad

Ingredient | Amount |

2 lbs. / 1000 g | PEI Annabelle Potatoes |
2 tbsp / 30 ml | Our Compliments Whipped Dressing |
2 tbsp / 30 ml | Hellmann`s Real Mayonnaise |
6 - 8 stalks / 6 -8 stalks | Green onions |
to taste | Lemon juice |
to taste | Salt |
to taste | Pepper |
Directions
1. Preheat oven to 350 degrees. 2. Wash potatoes and pierce with fork. 3. Roast potatoes in oven till golden and soft to the touch when poked with a knife. 4. Remove from oven and roughly slice in half and allow to cool until still warm, but not cold. 5. Add the mayonnaise, whipped dressing, green onion, salt, pepper and lemon juice and then toss together.
