Potato Fudge



Ingredient Amount
1/3 cup / 80ml Hot potatoes (mashed or seived)
2 cups / 470 ml Walnuts (chopped) optional
3 tbsp / 40ml Butter or margarine
3 squares Semisweet chocolate
4 cups / 1000ml Sifted icing sugar
1tsp / 5ml Vanilla
to taste Salt


Cook and mash potato. Hints- used leftover mashed potato and heat or microwave a large potato and mash. Melt chocolate and butter over hot water. Add mashed potato, salt, and vanilla. Blend in sifted icing sugar (important so it is not lumpy) Knead until smooth. Put in slightly greased pan. Let cool and cut into squares. Variations: add nuts and or flavoring such as mint.
