Potato-Apple Summer Salad



Ingredient Amount
4 Large Russet Potatoes
1 Large apple
3 Hard boiled eggs, mashed
4 tbsp / 60 ml Miracle whip salad dressing
2 tsp / 10 ml Whiter sugar
sprinkle Paprika
1/2 cup / 125 ml Frozen peas
1/3 cup / 80 ml Shredded carrot


Peel, boil and mash potatoes. Cook Hard boil eggs , peel and mash. Microwave peas in warm water for 2 minutes, drain. Peel and cut up apple. Mix eggs ,mashed potatoes, diced apple, peas, shredded carrot, sugar and miracle whip together in a bowl. Sprinkle paprika on top. Refrigerate.
