Potato-and-Pumpkin Soup



Ingredient Amount
1/4 cup / 50 ml Butter or Margarine
1 Medium Onion(finely chopped)
2 Leeks or Green Onion
2 Medium Potatoes
2 cups / 500 ml Pumpkin (canned or cooked)
2 cups / 500 ml Water
2 tbsp / 30 ml Chicken Bouillon Base
to taste Salt and Pepper
2 cups / 500 ml Milk or Cream ( or half and half )
garnish Chopped Fresh Parsley, Chives or Cheese


Saute onion or leeks in butter until limp, but not brown. Combine with potatoes, pumpkin, water and soup base. Simmer until potatoes are tender. Sieve or put through a blender. Stir in seasoning, milk and cream. Heat slowly. Do not boil. Sprinkle with chives, parsley or cheese. Serves 4-6
