Potato-and-Pumpkin Soup

1/4 cup / 50 ml | Butter or Margarine |
1 | Medium Onion(finely chopped) |
2 | Leeks or Green Onion |
2 | Medium Potatoes |
2 cups / 500 ml | Pumpkin (canned or cooked) |
2 cups / 500 ml | Water |
2 tbsp / 30 ml | Chicken Bouillon Base |
to taste | Salt and Pepper |
2 cups / 500 ml | Milk or Cream ( or half and half ) |
garnish | Chopped Fresh Parsley, Chives or Cheese |
Directions
Saute onion or leeks in butter until limp, but not brown. Combine with potatoes, pumpkin, water and soup base. Simmer until potatoes are tender. Sieve or put through a blender. Stir in seasoning, milk and cream. Heat slowly. Do not boil. Sprinkle with chives, parsley or cheese. Serves 4-6This potato recipe is brought to you courtesy of Ashton Perry.
