|2||Green onions, chopped|
|1 tbsp / 15 ml||Olive oil|
|4 strips||Bacon (diced)|
|1/2 cup / 125 ml||Ranch dressing|
DirectionsRinse and boil mini golden potatoes (can be substituted with red potatoes), when potatoes are tender drain add in a pyrex dish with olive oil and place in the oven on 350 till golden and slightly crispy. Cook 4 strips of bacon, once that is cooked nice and crispy cut it up in small pieces and put aside. Chop up two stems of green onions and put aside. 4) Once potatoes are cooked take out of the oven, add more olive oil (just a splash) then add bacon, green onions, salt & pepper, and ranch dressing. Poochie Potatoes are a crispy spin on the usual cold mayonnaise potato salad!
