PEI Potato Quesadillas

Ingredient Amount
1 onion, chopped
1/4 tsp / 1ml pepper
2 cooked PEI potatoes, diced finely
12 7 inch tortillas
1/8-1/4 tsp / 0.5-1ml crushed chilies
19oz / 540ml can tomatoes, chopped
1 cup / 250ml grated mozzarella cheese
2 garlic cloves, crushed
1/2 cup / 125ml grated cheddar cheese
3 Italian sausages, hot or mile


Remove sausage from casing and cook with onion and garlic in a non-stick skillet for 15 minutes or until sausage is browned and crumbled. Drain fat. Add potatoes, tomatoes, garlic, crushed chilies and pepper. Cook, stirring often for 5 minutes. Spread 1/3 cup (75 mL) of sausage mixture on half of each tortilla. Sprinkle with cheese and fold closed. Bake on a greased baking sheet at 400ºF (200ºC) 10-15 minutes, until golden. Serve with salsa, guacamole, sour cream and/or yogurt.
