Microwave Stuffed Potatoes

Ingredients

2 Medium | Potatoes |
1 tsp / 5ml | Butter or margarine |
1-1/2 Tbsp / 22.5ml | Processed cheese spread (or real cheese grated) |
1/8 cup / 30ml | Green onions or chives, thinly chopped |
1 Tbsp / 15ml | Bacon bits |
To taste | Salt and pepper |
Directions
Brush clean 2 potatoes (Russets are good). Poke small holes into each and microwave 6-8 minutes or until soft. Remove from microwave - they will be hot! - and cut off a thin slice from the top of each. Scoop out pulp and place in a bowl. Set skins aside. Mash pulp with a hand masher adding all remaining ingredients except cheddar cheese. Note: These ingredients can be increased or decreased to taste. Heap into skins. Top with grated cheddar cheese. Reheat in microwave until heated through and cheddar has melted slightly. Serve immediately. Note: Potatoes may be made ahead of time and reheated just before serving.
