Maple Mustard Campfire Roasted Potatoes

1-2 lb / 500-1000 g | Mini White Potatoes |
2 tbsp / 30 ml | Maple Syrup or Honey |
2 tbsp / 30 ml | Mustard Powder |
1 | Onion |
1/2 cup / 125 ml | Butter |
1 large piece | Heavy Duty Tinfoil |
Directions
Cut potatoes into pieces no larger than 1 inch. Dice up the onion as small as you desire. Place potatoes and onions on a large piece of heavy duty tinfoil, you want enough extra to create a pouch around the potatoes. Combine melted butter, maple syrup (or honey), and mustard powder. Pour over the potato and onion. Wrap up the contents creating a pouch with the tinfoil. Place the pouch on a pan in case of dripping. You can roast your potatoes over the campfire, cooking grate, or on your BBQ. Roast for about 15 minutes, depending on your fire, you could check around the 10 minute mark to prevent burning. Unwrap and enjoy! To enjoy at home, you can place in a foil lined 9x13 Pyrex dish. Bake at 350 for about 40 minutes.This potato recipe is brought to you courtesy of Tracy McLennon.
