|1 cup / 250 ml.||Cottage Cheese|
|1/4 cup / 50 ml||Butter (softened)|
|4||Green Onion's ( White Part Only) (Finely Chopped)|
|To Taste||Salt & Pepper|
DirectionsIn a large saucepan of cold, salted water, add potatoes, peeled & quartered, bring to a boil. Cover & simmer for 15 to 20 minutes or until the potatoes are tender but not mushy. Drain & shake over low heat to dry off. Mash potatoes with a masher, put through a food mill, or beat with an electric mixer. In a seperate bowl, combine cottage cheese & eggs.Beat into potatoes. Beat in butter and green onion's,Season well with salt & pepper. Pile into buttered 11 in. x 7 in. (2L.) dish, cool & refrigerate. To reheat, bake in 350-F (180 C) oven for about 20-25 minutes or until heated through.
