Make Ahead Mashed Potatoes

3 lbs. / 1.5 kg. | Baking Potatoes |
1 cup / 250 ml. | Cottage Cheese |
4 | Eggs |
1/4 cup / 50 ml | Butter (softened) |
4 | Green Onion's ( White Part Only) (Finely Chopped) |
To Taste | Salt & Pepper |
Directions
In a large saucepan of cold, salted water, add potatoes, peeled & quartered, bring to a boil. Cover & simmer for 15 to 20 minutes or until the potatoes are tender but not mushy. Drain & shake over low heat to dry off. Mash potatoes with a masher, put through a food mill, or beat with an electric mixer. In a seperate bowl, combine cottage cheese & eggs.Beat into potatoes. Beat in butter and green onion's,Season well with salt & pepper. Pile into buttered 11 in. x 7 in. (2L.) dish, cool & refrigerate.
