Loaded Potato Chicken Casserole

1/2 cup / 125 | Diced green onion |
2 lb / 907g | Mini potatoes (1 bag) |
1/2 cup / 125 ml | Ranch dressing |
2 cups / 500 ml | Grated marble cheese blend |
1 cup / 250 ml | Crumbled bacon |
2 | Chicken breasts |
to taste | Salt and Pepper |
Directions
Preheat oven to 450 degrees. Place thawed chicken breasts on paper towel to remove some of the moisture. Cut potatoes into quarters. In a bowl, mix together the raw potatoes and 1/4 cup of ranch dressing. Scoop the potatoes into a baking dish and cook for 30 minutes.. While the potatoes are cooking, cut the raw chicken into smaller pieces. Mix together the remaining 1/4 cup of ranch dressing with the pieces of chicken. After the 30 minutes is up, remove the baking dish from the oven. Lower the temperature to 400 degrees and add the raw chicken on top. Cover with aluminium foil and continue to bake for 20 minutes. (or until chicken is cooked through) After the 20 minutes is up, take the baking dish out of the oven and cover with all of the cheese, bacon bits and green onions.
