|5 Medium / 5 medium||Potatoes|
|1 1/2 tsp divided / 7 ml/ divided||Salt|
|4 oz. / 125 ml||Cream Cheese, softened|
|2 tbsp / 30 ml||Butter|
|2 tbsp / 30 ml||Chives, snipped|
|1/4 tsp / 1 ml||Pepper|
Directions- Place potatoes in a saucepan; cover with water; add 1 tsp salt and bring to a boil. - Reduce heat. Cover and cook for 25 - 30 minutes or until tender. Drain well. - In a large mixing bowl, mash the potatoes until smooth. - Add cream cheese, butter, chives, pepper and remaining salt. - Gradually beat in the buttermilk. - Yield: 4 - 5 servings.
