Chicken-stuffed Potatoes

Ingredient Amount
4 large Baking potatoes
1 Boneless chicken breast
1 1/2 cups / 375 ml Frozen vegetables (your choice)
3/4 cup / 188 ml Grated cheddar cheese
1/3 cup / 83 ml Sour cream light or regular
1/4 tsp / 1 ml Pepper
1 tsp / 5 ml Minced Garlic


Preheat oven to 400 degrees 1) Wash and bake potatoes (45 minutes or until tender) 2) Cook chicken breast and frozen vegetables. 3) When potatoes are cooked slice top off and scoop out potato , make sure you keep the skin intact. 4) Mash the potatoes add the sour cream, cheese( save a 1/4 cup of the cheese to sprinkle on the top of the potatoes) mix in vegetables and chicken. 5) Stuff the potato skins with the mixture and heat through than sprinkle with remaining cheese and bake again until cheese is melted. Serve hot.
