|1 can||Can of escargot|
|2 tbsp / 25 ml||Butter melted|
|1/4 cup / 50 ml||Mozzarella cheese|
|to taste||Pepper and salt|
DirectionsSlice a small piece off the bottom of each baby potato so it sits without rolling. Place on plate and cover with a steam cover and microwave for about 10 minutes. On the top of each potato, scoop out a small indention Place one escargot on each potato. Mix crushed garlic in with butter. Drizzle a portion of melted garlic butter over each potato escargot. Sprinkle mozzarella on each as well. Pop back into the microwave for about 1 1/2 minutes to melt cheese. Place a toothpick on each and serve.
