Avacado Cheddar potato

Ingredient Amount
2 Tbsp / 30 ml Salsa
1/2 Avacado
2 Tbsp / 30 ml Scallions
1 Baked potato


Bake potato in oven until cooked through Preheat broiler Cut potato in half, and mash sour cream into potato half with fork. Top with scallions and cheese. Place on a small nonstick baking pan and broil until cheese is melted and browned, about 3 minutes. Mash together avocado with salsa (to make guacamole) and place on top of potato. Serve while warm.
