Potato Chocolate Cake

2 cupsBrown sugar500 ml
1 cupWater, lukewarm250 ml
2/3 cupButter, softened160 ml
1 cupPotatoes250 ml
1 tspVanilla Extract5 ml
4Eggs 4
3/4 cupCocoa180 ml
2 cupsAll Purpose Flour500 ml
1/2 tsp Baking Soda2 ml
pinchSaltpinch
3/4 cupSemi-Sweet Chocolate Chips180 ml




Directions
Directions:
Preheat oven to 350oF
Whisk water into mashed potatoes until mixture is smooth
Using an electric mixer, blend butter, sugar and vanilla until light & fluffy. Add eggs.
In a separate bowl, mix cocoa powder, flour, baking soda, baking powder.
At low speed, alternate the dry ingredients with the mashed potato mixture. Mix together well.
Fold in the chocolate chips.

Pour into a greased bundt pan. Bake for 45-60 minutes until cake is cooked through.

Top with your favorite topping of choice: Icing, whipped cream or dust with icing sugar. Enjoy!!
