Potato-and-Pumpkin Soup

MONTHLY WINNER 

Potato-and-Pumpkin Soup

2 cupsPumpkin (canned or cooked)500 ml
1/4 cupButter or Margarine50 ml
2Leeks or Green Onion2
2 tbspChicken Bouillon Base30 ml
2Medium Potatoes2
1Medium Onion(finely chopped)1
2 cupsWater500 ml
garnishChopped Fresh Parsley, Chives or Cheesegarnish
2 cupsMilk or Cream ( or half and half )500 ml
to tasteSalt and Pepperto taste




Directions
Saute onion or leeks in butter until limp, but not brown.

Combine with potatoes, pumpkin, water and soup base. Simmer until potatoes are tender.

Sieve or put through a blender. Stir in seasoning, milk and cream. Heat slowly. Do not boil.

Sprinkle with chives, parsley or cheese.

Serves 4-6
