Grilled Potato Skins

8 Medium yellow flesh or Small Russet8
3 tbspButter45 ml
1 cupCheddar Cheese, Shredded250 ml
5 slices Bacon, crumbled5 slices
1Small onion, finely diced1
1/2 cupSour cream125 ml
1 tspDried Rosemary5 ml
to tasteSaltto taste
to tastePepperto taste

Preheat grill to medium heat. Combine rosemary, butter, salt, and pepper in a small bowl.

Cut potatoes in half and hollow out the center of each half. Place
potatoes in the microwave for 6-7 minutes then brush potatoes
with butter mixture.

Place potatoes on grill rack skin side up. Grill for 5 minutes, turn, and grill for another 3 minutes.

Add cheese to potatoes and cook for an additional 2-3 minutes.

Remove from grill, and top with crumbled bacon, onion, and sour cream.
