Chive Mashed Potatoes

1 1/2 tsp dividedSalt7 ml/ divided
5 MediumPotatoes5 medium
2 tbspButter30 ml
4 oz.Cream Cheese, softened125 ml
1/4 tspPepper1 ml
2 tbspChives, snipped30 ml




Directions
- Place potatoes in a saucepan; cover with water; add 1 tsp salt and bring to a boil.

- Reduce heat. Cover and cook for 25 - 30 minutes or until tender. Drain well.

- In a large mixing bowl, mash the potatoes until smooth.

- Add cream cheese, butter, chives, pepper and remaining salt.

- Gradually beat in the buttermilk.

- Yield: 4 - 5 servings.
