Deconstructed Baked Potatoes - <font color=D61602>2nd Place Winner 2016</font>

2.5 ouncesBoursin Cheese 75 gram
1/2 tspPepper2 ml
2Green Onions2
1/2 cupSour Cream125 ml
1/4 cupHellman's Mayonaisse60 ml
1/4 cup Bacon Bits60 ml
2 Leftover Baked Potatoes2
1/2 cupGrated Cheddar Cheese125 ml




Directions
Preheat oven to 375 degrees.

Cut leftover baked potatoes into small chunks, remove any loose potato skin. Place in a large bowl.

Crumble Boursin cheese into the potato chunks, add sour cream, hellman's mayonaisse, green onions, bacon bits and pepper.

Mix all ingredients together and pat into a 9 X 9 pan.

Sprinkle the top with grated cheddar cheese.

Bake for 25 to 30 minutes - or until mixture is bubbly and grated cheese has a nice melt.

You can broil for 2 minutes on high for a nice brown topping

Your potatoes are the best for every recipe I make. I love the idea of cheese, sour cream. bacon mayo, etc. that I add to the potato and even eating it without any thing on it and even raw. Even with leftover potato it taste just like you would of cook it that same day.
