Lobster-Stuffed Spuds

3 tbspButter45 ml
1/4 cupCooked Bacon50 ml
3/4 cupLobster180 ml
1/4 tspFresh Cracked Pepper1 ml
1 cupCheese Lady's Gouda, grated250 ml
1/4 cupGreen Onion50 ml
6PEI Baked Potatoes6
1/2 cupSour Cream125 ml




Directions
Preheat oven to 400 degrees.

Cut baked potatoes in half lengthwise and scoop out the flesh; set the skins aside.

In a bowl mash the potato with the butter, sour cream, green onion and half of the cheese. Beat until smooth.
Fold in lobster meat and bacon and season with salt and pepper.
Spoon mixture back into the potato skins. Cover with remaining cheese and bake for about 15 minutes.
