Potato Spinach Bake

1/4 tsp.Paprika1 ml
2Eggs2
5 mediumPotatoes5 medium
1 lbSpinach500 g
1/4 tsp. Nutmeg1 ml
1 tbsp.Poppy seeds15 ml
1 tsp.Ground cumin5 ml
1 mediumOnion1 medium
1 tbsp.Vegetable oil15 ml
1 1/2 Cup Cheddar cheese (grated)375 ml
1/2 cupMilk125 ml
1/2 tspSalt2.5 ml
1/2 tspPepper2.5 ml




Directions
1) Scrub potatoes then boil until tender. Slice about 1/4 inch thick.
2) Chop onion and saute until translucent, add spices, stir together for about 1 minute.
3) Wash, drain and chop spinach. Add to the onion mixture and cook until spinach is softened.
4) Place sliced potatoes in a single layer on a greased casserole dish. Sprinkle with half of the grated cheese and half of the poppy seed.
5) Add a layer of the spinach and onion mixture than add another layer of potato and sprinkle with remaining cheese and poppy seeds.
6) Beat the eggs and milk together, add salt and pepper then pour over entire mixture.
7) Bake at 350 degrees for 40 - 45 minutes.
