Potato Fish Bake

1/3 cupFlour75 mL
1/2 cupChicken stock125 mL
1/3 cupCheddar cheese75 mL
2 cupsMashed potatoes500 mL
1 poundHaddock or cod filets0.45 Kg
to tasteSalt and pepperto taste
2 TbspButter30 mL
1Medium onion1
1/2 tspSummer savory2 mL
1 tspParsley5 mL
1 cupMilk250 mL

Saute onion in butter until brown. Stir in flour, add milk and stir. This may be quite thick add chicken stock to reach a nice consistency, not to thick. Add summer savory ,parsley salt and pepper to taste. Set aside.

In a 9x9 square baking dish place mashed potatoes to one side, on the other side place fish fillets. Cut if necessary then pour sauce over fish and some on potato.

Bake at 350F untill fish is done about 20-25 minutes or until slightly brown. Add a little cheddar cheese over top and bake a little longer
