Austrian Potato Casserole

1onion, large regular or sweet large 1
3tbspsoft butter 1tbsp to grease pan 2tbsp to add to recipe40ml
6large yellow or white potatoes6
3tbspfresh parsley finely chopped40ml

Wash and slice potatoes - leave skins on for nutrients. Peel onion and slice. Coat a 6 x 8 glass oven dish with 1tbsp butter. Layer potatoes, onion and butter in dish. season with salt and pepper and sprinkle parsley on top.

Cover with foil and bake @350 for 40-50 minutes until cooked. Uncover to brown top and serve.
(optional- if you love garlic add some chopped garlic, or dried dill)
