Newfoundland Pork Cakes

2 cups6 potatoes peeled/boiled/mashed500ml
2 tspBaking powder10ml
1 cupsalt pork minced250ml
2 cupsFlour500ml

Pre-heat oven to 400F.

Scrub/peel and boil potatoes. Mash well. Add minced salt pork and combine well.

In a separate bowl mix baking powder and flour. Add to the mashed potatoes and salt pork. Mix together and form into oval patties. Bake for 1/2 hour or until brown.
