Gluten Free Potato Muffins

1/3 cupSour Cream 80 ml
3 cupsMashed Potatoes750 ml
1/2 tspSalt 2 ml
1/2 tspPepper2 ml
2Eggs2
2 tbspParmesan Cheese30 ml
1 1/2 tbspGrated Cheese 22.5 ml
2 tbspChives Chopped30 ml




Directions
Preheat oven to 400 degrees.

In a bowl mix together eggs, sour cream, cream cheese, chives and potatoes.

Spoon into muffin tins (use non stick or grease muffin tins).


Bake for 25-35 minutes. Serve with sour cream.
